Under the inner pot, a thermostat is installed that keeps the temperature within the range determined by the program you chose. This mechanism also prevents the food from overdrying: when water evaporates, the pressure stops building up and this causes the pot overheat; once a certain limit is reached, the temperature sensors kick in and reduce the heat. With an electric pressure cooker, you just plug it in and choose the program and let it do everything for you. With Presto, as well as any other stovetop model, you have to decide on the temperature and the cooking time and keep an eye on it to make sure everything is going right. See More
