A bit is a single character value that can only be one of two options, off or on, represented by 0 or 1.

The number of bits in a CPU refers to the amount of memory it can address.
A 64 bit processor can access 16 billion gigabytes of RAM, a 32 bit processor can only access 4GB of ram.
More ram is only beneficial if you need it to store data that is applicable to the software you are running, for certain workloads there is a benefit, such as rendering, video editing, huge databases, etc... but for most everyday users who do not do rendering, video editing, creating and querying huge databases there really is no benefit between running a 32 bit or 64 bit system, but there is no detriment to using a 64 bit system if your CPU supports it so most people go ahead and use the 64 bit version if they have a 64 bit CPU. Since most CPU's since 2005 are already inherently 64 bit you can usually safely use the 64 bit version.
