Pros
Pro Compatible with a wide variety of containers
The Anova utilizes a clamp instead of the more common clip that allows it to be used with a much wider variety of containers.
Pro 3.6" range between the minimum and maximum water level
Pro Available in different voltages
Can be used for 120v or 220v, only requiring the purchase of AU, EU, or UK plugs.
Pro Easy to clean
Cleaning only requires you to unscrew the bottom and slide off the skirt, which protects the blades.
Pro Quick and accurate scroll wheel to set the temperature
Pro Has a companion app with recipes to automatically start preheating and cooking
Pro Wifi allows you to connect to the cooker from anywhere
Cons
Con Companion app needs more work
The companion app allows you to control the Anova by setting time and temperature manually or by selecting recipes. The problem is that the wifi frequently disconnects, touch targets to set time and temperature often don't work, and the app is completely unusable if it is not connected to the Anova. Not being able to use the app unless the Anova is connected makes it difficult to check times when deciding on recipes on the fly or checking cooking times when preparing a meal.
Con Only a 800W power output
The majority of other sous vide machines have a 1100W or more power output, meaning it takes nearly twice as long to get the same amount of water to the correct temperature.
