I am assuming that meeting the person face-to-face isn't an option. What I like about Keybase for this use case is that users can "prove" their identity using social media. This creates a web of trust so that you know that the person you are corresponding with is the person they claim to be. It's built on top of PGP/GPG so you can still use email as the transport mechanism if necessary. Keybase also offers other collaboration features like file sharing and group chat. See More
