If you're switching to linux and looking for something that allows you to do absolutely anything you want to do with PDFs, the only option, as far as I can tell, is PDF Studio. It's great--full featured, fast, stable. I am very happy with it. A great replacement for Acrobat Pro on Mac/PC.
